Toppings can include onion, mushroom, peppers, pineapple, sweetcorn, fresh chilli etc.
Method
Sieve the chickpea flour into a good sized bowl then add the onion powder, garlic powder, white pepper, black pepper, nutritional yeast, and baking powder. Mix well.
Gently add 1 cup of warm water to the dry ingredients and stir until the batter is smooth.
Heat a little oil in a frying pan over medium heat. Pour the batter into the pan then add the toppings into the batter as it cooks.
After a minute or two, when you see the edges of the underside beginning to brown, flip the omelette. This can be tricky at first but once you’ve done it a few times things will improve.. After a couple of minutes flip the omelette right side up again, cook for a further minute then serve.
