Our seitan salad has all the protein and iron naturally found in seitan and the nutrients, fibre and vitamins in the vegetables, nuts and seeds.
You can trace the history of the humble salad right back to the Romans and ancient Greeks who ate mixed greens with a dressing. The word itself comes from the Latin “Salata” meaning Salty as back in Roman times vegetables were seasoned with brine or salty oil-and-vinegar dressings.
We’ve long associated the salad with healthy eating and dieting although so many people cover it in Extra Virgin Olive Oil or similar oily dressings not knowing that they are adding a large portion of pure 100% fat.
Warm some seitan in the oven or under the grill for a few minutes (you can also have it cold), add to the salad / vegetables of your choice, add a few crushed walnut halves and seeds then add a little balsamic vinegar or glaze and serve.
