Risotto is a northern Italian rice dish cooked in a broth to a creamy consistency. The first recorded Risotto recipe dates back to 1809, the ingredients included rice sauteéd in butter, sausages, bone marrow, onions and saffron!
Clearly our Italian ancestors were slightly lacking in knowledge when it came to healthy eating and luckily we can still enjoy a delicious, creamy Risotto without having to consume huge amounts (or any) saturated fat. As for the bone marrow, it really doesn’t bare thinking about.
Once you have prepared your basic Risotto dish, 10 mins before serving add your cubed Seitan. You can use anyone of our types of Seitan as all accompany the Risotto perfectly. In keeping with the creamy texture of the dish adding the Seitan without pre-cooking compliments its rich smooth consistency.
