There’s nothing quite like a Full English Breakfast, other than maybe one that’s actually good for you! A traditional fried breakfast maybe something you’ve grown to love but the amount of saturated fat and cholesterol in the standard Eggs, Bacon, Sausages and Fried Bread really will keep your cardiologist in very well paid work for as long as he or she wants. The standard Full English adds up to 1,190 calories and 95.7 grams (about 3½oz) of fat. That’s more than your ideal daily limit of fat in one meal!
The traditional fried breakfast was conceived in the industrial revolution when working class men would burn up to 6,000 calories a day. Now we lead much more sedentary lifestyles we cannot expect to consume such high fat meals regularly without suffering the consequences.
So let’s reinvent the Full English but make it healthy! Firstly we’re not going to use any oil in preparing our breakfast. Using a decent non-stick frying pan add a couple of tablespoons of water or vegetable broth then throw in some mushrooms, tomatoes, peppers, mange tout, whatever you fancy really especially if you have it already in the fridge. If you want to make it more authentic, throw a couple of hash browns in the oven and warm up some baked beans.
Grill or dry fry two or three slices of seitan. You can use Smokey Dokey, Italian Herb or Ham-Style, whichever you prefer. This wonderful breakfast will contain a fraction of the fat and cholesterol, the same amount of protein but many more nutrients from the vegetables.
Personally we like it with a little HP Sauce, but then who doesn’t?
