Seitan Bolognese

No surprise that Bolognese sauce originates from Bologna in Northern Italy. The recipe itself dates back to the late 18th century and has historically always been based upon a meat sauce served with pasta.

Originally it would have been served with Tagliatelle rather than Spaghetti, in fact, the name Spaghetti Bolognese is virtually unheard of in Italy itself, but is a very popular dish elsewhere in the world.

To create an authentic, cruelty free vegan version, finely chop, grate or pulse your Seitan for a few seconds in a food processor until it reaches the consistency of mince. Add it to a tomato based sauce and warm for 5-10 minutes. Serve with fresh basil, garlic bread and a decent Barolo.
